15%Discover the Morasso by Cascina Montagnola – an outstanding white wine made from 100% Timorasso, grown in the Montagnola vineyard of the Colli Tortonesi region in Piedmont.
Colour & Aroma: The wine displays an intense straw‑yellow colour with bright green highlights. On the nose it reveals refined, deeply expressive aromas of ripe plum, cedar, fresh hazelnut and pronounced mineral tones.
Palate & Structure: This is a richly structured wine, yet balanced and elegant. Its strong acidity supports a higher alcohol content, leading to a long, persistent finish and a taste profile that is both powerful and refined.
Vinification & Ageing: The Timorasso grapes are hand‑harvested in 15 kg crates in the third decade of September. After gentle pressing and cold static decantation, fermentation takes place at controlled temperature. The wine then matures for ~12 months in stainless steel vats with periodic lees stirring, followed by around 12 months of bottle aging before release.
Serving & Pairing: Serve at 10‑12 °C in a generous glass. Ideal pairings: raw shellfish and seafood, first courses with fish (e.g., fish ravioli), scallops of chicken or turkey, and medium‑aged cheeses.
